Austrian Pumpkin Seed Oil Scrambled Eggs
Ingredients:
3 Eggs
.5 Tablespoon Pumpkin Seed Oil
1 Teaspoon Butter
1 Teaspoon Milk
Bread of choice
Salt
Pepper

Directions:

  1. Heat pan on medium-low heat
  2. Melt butter in pan, turning the pan to cover the bottom
  3. Beat the eggs with the pumpkin seed oil until lightly frothy
  4. Add milk to the mix
  5. Add salt and pepper to taste
  6. Pour the mix into the heated pan and scramble until the eggs appear nearly done
  7. Remove the pan from the heat
  8. Slide the eggs onto a slice of hearty bread, such rye or sourdough
  9. Enjoy a healthy, nutty, Austrian breakfast

Pumpkin Seed Oil is a Styrian specialty that can add a nutty flavor to many dishes. Examples of where you may encounter pumpkin seed oil include in scrambled eggs, as a topping for vanilla ice cream, blended into a cheese spread, or mixed with vinegar as a salad dressing.

Austrian Buschenschank Liptauer Spread

Ingredients:
3.5 oz Cottage Cheese (may substitute plain cream cheese)
2 Tablespoons Softened Butter
1 Tablespoon Chopped Onion
1 Chopped Garlic Clove
1 Teaspoon Dijon Mustard
1.5 Teaspoon Sweet Paprika Powder
.25 Teaspoon Caraway Seeds
.25 Teaspoon Salt
Choice of Bread
Choice of Cold Cuts (optional)

Directions:

  1. Mix the cheese with the butter until smooth
  2. Add the chopped onion and garlic and mix
  3. Add in the spices and salt and mix well
  4. Spread on a slice of hearty bread, such as rye or sourdough
  5. Add choice of cold cuts to create a more filling dish

Liptauer, just to the right of the tomatoes, is a popular spread in Styria, Austria. It was served to us multiple times alongside homemade bread and trays of cold cuts as a traditional lunch option. Some common garnishes for the spread include pickled cucumber, red bell pepper, and capers.
